Zucchini bread is simple to make and tastes very delicious. It is sweet and savory all at once. The smell of freshly baked zucchini bread will fill your home with happiness. View slideshow here.

Make some before Thanksgiving so you can have it for breakfast on Thanksgiving morning and not make a mess of the kitchen before you get started on the big meal. You and your helpers will love nibbling on this tasty treat all morning long.

If you grow your own zucchini in the garden, you can shred them and freeze them in bags with two cups in each bag. This makes it so easy to pull zucchini out of the freezer and make zucchini bread fresh and warm all year round.

Kids love zucchini bread. Serving this is a great way to sneak vegetables into their diet. It is a treat for them and you will know it is a nutritious snack as well.

This is a traditional zucchini bread recipe. There are lighter versions which use apple sauce as a substitute for some of the sugar. Here is a YouTube video with instructions on how to make a vegan version of zucchini bread, if that is more your style.

Simple zucchini bread:

1 ½ C. flour

1 tsp cinnamon

½ tsp. salt

½ tsp baking soda

1/8 tsp. baking powder

½ C. canola oil

2 large eggs, lightly beaten

1 C. sugar

1 ½ tsp pure vanilla extract

2 C. zucchini, coarsely grated
