Her patented method of cooking is quick, easy, and healthy. “I, too, am a working mother and can relate to the real struggle to find time to cook meals.” She adds that everything cooks together in the Dutch oven and, “clean up is so easy with just one pot to wash!”
It’s also economical. She says, “This is a great solution for cutting down the amount of money you're spending by getting takeout or eating out so frequently. Home cooking saves money, and with this method and 5-20 minutes to prep, you can have dinner on the table in 30-45 minutes.”
Elizabeth had a very personal reason for wanting to eat healthier. She was diagnosed with Multiple Sclerosis when she woke up one morning and couldn’t see out of one eye right before her 30th birthday. Since it is an incurable autoimmune disease, Elizabeth felt that one way she could fight it was by controlling what she ate. She began studying nutrition and decided that she needed to find a way to eat healthier with a minimum of effort.
The answer came in a Dutch oven that she and her husband received as a wedding gift. Elizabeth figured out how to place all the ingredients in one pot and cook them together for the same amount of time, yet still have each ingredient emerge as a separate dish at the end.
She started to share this information with her friends and family with a 12-page guide which quickly grew into a 25-page booklet. She said, “Once I realized how much other people enjoyed learning this cooking method I was compelled to share.” She turned it into a book and tried to get it published. She was turned down by more than fifty agents and publishers and finally decided to publish it herself. But the story doesn’t end there.
Her book was purchased by Random House/Broadway Books and their edition was released on January 6, 2009. When asked how she was able to get a contract with a major publisher after self-publishing, she explained, “The main reason I didn't get a publishing contract 8 years ago was that I didn't have a platform. I began to teach, speak, and write about healthy eating. Then my self-published book won multiple awards and sold tens of thousands of copies. This is when I got the attention of publishers.”
This cook book is great for working women because Elizabeth gives strategies for stocking your freezer, fridge, and pantry so you’re always ready to make a meal. She says, “This works so well because this cooking style accepts frozen ingredients without changing the cooking time! You'll never have to remember to pull something out to thaw again!”
All the recipes are designed for two servings - great for singles and couples. And if you have more people eating, you can just double the recipe.
For Elizabeth it means so much more than just a way to make dinner. She explains, “It has become my mission to help people be able to improve their diets by providing a quick, easy, and convenient cooking method that would allow them to take charge of their health.”
