4th of July desserts

Oh sure your Fourth of July will feature appetizers and main dishes but, it’s the dessert everyone waits for! This red, white and blue trifle is a perfect 4th of July dessert and works well for a large party or a simple family meal. Everyone will find it to be delicious and nobody needs to know how easy it was to make!

This is very easy recipe and therefore, a great one for kids to help make! Let them be in charge of the berry layers. To make it easier (and assure even layers) pre-measure the berries into 1 cup increments before hand and give them only that amount for each layer.

Easy 4th of July dessert: Red, White and Blue Trifle
Serves 10-15

Note: This recipe uses lower calorie options, but of course you can always substitute the higher calorie whipping crème and pudding if you prefer..

Ingredients:

2 packages prepared low-calorie instant vanilla pudding
2- 8-ounce container fat-free or light whipped topping, set aside 1/2 cup to the side
3 1/3 cups sliced fresh strawberries, set aside about 1/3 of a cup to the side
3 1/3 cups blueberries, set aside about 1/3 of a cup to the side
1 prepared (10-12 inch) angel food cake, cut into small cubes

Instructions:

  1. Fold the vanilla pudding into the whipping topping (minus the reserved ½ cup of whipped cream).
  2. Mix in the angel food cake cubes into the pudding/whipped cream mixture
  3. Place 1/3 of the cake/pudding/whip cream mixture on the bottom of a 2- to 3- quart trifle dish or straight-sided clear glass serving bowl.
  4. Lay a layer (1 cup) of the  sliced strawberries over the mixture: making sure to reach the edges  - so the red will be seen through the glass at all angles
  5. Follow with a layer (1 cup) of the blueberries, again making sure to reach the edges  - so the blue will be seen through the glass at all angles.
  6. Repeat 2 more complete layers: cake/pudding/ whipping cream layer – strawberries – blueberries.
  7. Cover last layer of blueberries with reserved ½ cup of whipped cream
  8. Arrange reserved strawberry slices and blueberries on top – some cute ways a to start with a blue berry in the middle then surround that with a circle of strawberries and then a larger circle of  blueberries followed by a final circle of strawberries. Another cute way is to put a solid circle of strawberries with straight lines (like sunrays) of blue berries shooting out. Figure out what type of design you want and adjust the amount (from the 1/3 cup) of berries needed.
  9. Cover and chill in refrigerator for a minimum of 2 hours before serving

Once you make it, you’ll be making it all the time! Depending on what your fruits your family likes, you can try different combinations such as strawberries and bananas or peaches and blackberries.  They can also be made in individual cups (which kids seem to prefer) and make a great dessert anytime of the year!
