cracked crab
Step 1 -  Crab from 2 Dungeness Crabs

Crab cakes are enjoyed throughout the US none of taste as great as those made right here in the West Coast with our own Dungeness Crab! Since it is crab season right now, I thought I'd share with you our family recipe for crab cakes.

One problem with crab cakes is they often have so many other ingredients in them that the taste of the crab is over powered. Below is the best Crab cake recipe I have come up with. It is easy to make with the flavors blending together and allowing the crab be the most prominent flavor.

Ingredients:
1 pound Crab meat (about 2 crabs)
1 cup seasoned bread crumbs - divided in half
1 large egg (can use egg beaters)
1/4 cup mayonnaise
1/8 cup tartar sauce
1 teaspoon brown mustard
½ - ¾ teaspoon old bay spice
salt and pepper to taste

Margarine, butter, oil or cooking spray for frying

Step 3 of our best crab cakes
Step 2 - mixing together remaining ingredients

Directions:

1. Crack crabs and remove crab meat. Make sure all shells and cartilage are removed. You will want a combination of flake and lump crab. Toss crab with ½ of the breadcrumbs: set aside.

2. In a large bowl, mix together the remaining ingredients.

Step 5 of our best crab cakes
Steps 3 & 4 - mixing mixture with your hands and then
forming that mixture into a ball

3. Add in crab/bread crumb mixture and mix well using your hands.

4. Using your hands, form the crab mixture into a ball and then press it down to make the crab cake.

Tip: If time permits, refrigerate for 30 minutes before cooking.

6. Carefully slide crab cakes into oil and cook until lightly brown. Usually 3-5 minutes.

7. Gently flip crab cakes and fry on the other side until golden brown.

Serve warm with preferred sauce.
