We have basil, basil and more basil ready to be harvest and it got me thinking that we are probably not alone! One great thing to use basil for is of course pesto sauce. Over the years we have tried multiple pesto sauce recipes before settling on one. While most pesto sauce recipes have the same four basic ingredients: fresh basil, garlic, cheeses and oil they are not all alike! In the spirit of over producing herb gardeners around the world, we give you our favorite basil sauce recipe to try. Best Darn Pesto Sauce 2 solid cups basil leaves 3 cloves garlic - peeled and lightly chopped or crushed 1 cup pine nuts 1 1/4 cups freshly grated mixed Parmesan and Romano cheese 1 cup extra virgin olive oil Place the basil, garlic and nuts together in a food processor (or blender) and process until finely chopped. Add cheese and process until well mixed. While the food processor is running, add the olive oil in a slow, even stream until well blended. Salt and pepper is optional and can be added now to taste Store your pesto sauce in an air-tight container. It will keep well in the refrigerator for a week or so. Note:
If you don’t have any fresh basil now you can have some soon by growing some inside. Basil does very well in pots and/or window boxes, allowing the cook to have fresh basil at their fingertips year-round!
