Caregivers, do you have a hard time finding low sugar desserts to serve your clients or diabetic family members? Making a low sugar muffin or cake is really easy. If you can find a sugar free cake mix would be wonderful, but if you can't don't worry. Krusteaz makes a fat free Apple Cinnamon muffin mix that is wonderful. By altering it ever so slightly you have a low sugar, fat free dessert.
Preheat oven to 350 degrees
The box mix comes with a flour mixture and apple pouch. The apple pouch has sugar added. Set it aside you won't be using it for this recipe.
Take the flour mixture and put it in a small bowl, where it calls for 1 1/4 cup water put sugar free applesauce or pear sauce in it's place. You might have to add slightly more to make up for the apple pouch. Mix with wooden spoon. You will be able to tell by the consistency if more applesauce or pear sauce is needed.
Spray a 8 1/2 x 4 1/2 x 2 1/2 inch loaf pan with a non stick cooking spray, pour batter in it. Bake at 350 degrees for 50-55 minutes or until golden brown and a toothpick inserted in the center comes out clean.
There you have it, a low sugar cake.
