Sweet Potatoes

Sweet potatoes and yams are an American staple, especially in the South.  Most of us buy yams, the orange fleshed potato, but they are often called sweet potatoes.  A sweet potato is smaller, and has lighter colored flesh, but in this recipe they are interchangeable.

 

This recipe for Sweet Potato Pone was adapted from an old (as in ancient) cookbook of Southern recipes that belonged to my grandmother, called "The Southern Cookbook - 322 Old Dixie Recipes" that was published in the 1930's. Most think of corn pone, which is a type of cornbread when they think of pone.  This is actually more like a baked pudding, nicely sweet and light.

 

Sweet Potato Pone

 

Ingredients

 

  • 2 cups grated sweet potatoes
  • 1 cup butter, softened
  • 3/4 cup sugar
  • 1/2 cup milk
  • 1 TB chopped crystallized ginger
  • zest from one medium orange

 

Directions

 

Heat oven to 325 degrees F.  In a medium bowl, beat the butter and sugar until well combined.  Add the remaining ingredients and mix well.  Pour the mixture into a 8 X 8 baking dish.  Bake for 45 minutes to 1 hour, until potatoes are softened and caramelized, and the pudding is set.

 

This can be served as a side dish, or even as a dessert with a scoop of ice cream or whipped cream on top.
