Omarosa Manigault Stallworth, of “The Apprentice” and “The Celebrity Apprentice” can also cook!  She showed Irene of  Irene Cooking with the Stars how to make her  delicious Spinach and Bacon Salad with Blueberry Vinaigrette.

Although she is known for her villainous ways, she recently entered the United Theological Seminary in Dayton, Ohio to become a minister.  According to her website, her greatest passion is working with at-risk youth and combating homelessness.  It seems she may have found her true calling, and Donald Trump is not on the other line.

 

Spinach and Bacon Salad with Blueberry Vinaigrette

6 slices of turkey bacon
2 quarts mixed salad greens
1/4 cup fresh lemon juice
1 tablespoon honey or sugar
1/2 teaspoon salt
1 cup fresh blueberries, divided
1/4 cup plain yogurt
2 tablespoons olive oil
a few grinds of pepper

TURKEY BACON
1. Heat small frying pan on medium heat
2. Add bacon
3. Continue to cook on both side till crispy
4. Drain bacon on paper towels
5. Crumble pieces over salad

MIXED GREENS AND VINAIGRETTE
1. Clean the spinach then blot dry with paper towel.
2. Mix together lemon juice, honey and salt. Mash 1/2 cup blueberries into the juice and honey mixture. Stir in yogurt, pepper and oil. Taste for seasoning.
3. Dress salad just before serving: place a portion of greens onto large salad plate, spoon dressing over and scatter reserved blueberries on top.
