Cool days need spicy food to warm you from the inside out.  This spicy beef chili is Texas style, which means there are no beans in the chili.  This chili is also known as chili con carne, which translates to "chili with meat." 

If you like a little less spice in your chili, eliminate the chipotle chili powder, or use less according to your taste.

Texas Style Spicy Beef Chili Recipe

Ingredients:

2 TB olive oil

5 lbs. beef chuck, cut into 1" cubes

1 med. red onion, chopped

1/4 cup chili powder

2 Tbs. minced garlic ( 4-5 cloves)

2 tsp ground chipotle chile powder

2 tsp sea salt

1 tsp ground cumin

1 tsp ground coriander

1 tsp dried oregano, preferably Mexican

1/2 tsp. dried thyme

2 cans (14 1/2 oz.) low sodium beef broth

1 can (14 1/2 oz.) diced tomatoes

2 TB tomato paste

Directions:


Heat oil in a large pot over high heat.  Brown the beef, remove from pan and reserve.

Lower the heat to medium, then add the onion, chili powder, garlic, chipotle chile, salt, cumin, coriander, thyme, and oregano.  Cook for 4-5 minutes, until vegetables have softened.

Add reserved beef, beef broth, tomatoes and tomato paste. Simmer over low heat for 2 hours, or until meat is tender and chili has thickened.  If the chili gets too thick, add more broth or water.  Adjust the seasoning as needed.

Serve your chili with a loaf of crusty bread to soak up the rich sauce.  You can also garnish with shredded cheese and sour cream.
