
There are some people who aren't into chocolate. I do not associate with these people, but I will respect their choice. This recipe is for those who prefer their sweets to be untouched by that wonderful, luscious, sensual pleasure that is chocolate.
I was harvesting more of my organic Meyer lemons this morning, and decided a recipe for lemon curd would be a nice addition to the Valentine's Day recipes being posted by our expert examiners.
Meyer Lemon Curd
6 large eggs
2/3 cup Meyer lemon juice
1 1/3 cup granulated sugar
8 TB (1 stick) chilled butter, cut into small pieces
1 1/2 TB fine lemon zest
In a double boiler or stainless steel bowl set over simmering water, whisk the eggs, lemon juice and sugar until blended. Stirring constantly, cook curd about 8-10 minutes, until thickened. Remove from heat, whisk butter a few pieces at a time into curd. Strain curd though fine strainer, then stir in lemon zest. Place plastic wrap directly onto surface of curd to prevent a skin forming. Cool in refrigerator. The curd will last about a week in the refrigerator.
For a quick and easy Valentine's Day dessert buy frozen puff pastry shells and bake as directed. Fill cooled shells with lemon curd, then top with fresh fruit, such as raspberries or strawberries.
