Tired of your morning cereal? Need a break from your scrambled eggs? Change things up with these easy, elegant and healthy open-faced smoked salmon sandwiches. With the wonderful smoked salmon available for reasonable prices at Trader Joe's or Costco, and the perpetual piles of avocados in Los Angeles markets, this is a treat that's in season all year long.

This breakfast has it all: whole grains in the toast, omega-3s and protein from the salmon, and a good dose of vitamins and healthy oils from the avocado. You might think you'd miss the standard cream-cheese-and-lox pairing, but really, you won't - the avocado spread is so rich and silky that you'll wonder why you ever bothered with cream cheese in the first place.

Not sure about fish for breakfast? These toasts make a great snack or light dinner. Use smaller toasts and they'll be the hit of your next cocktail party, too.

Smoked salmon avocado toasts

  • 2 slices hearty whole-grain bread
  • 1/2 ripe avocado
  • juice of 1/2 lemon
  • 2 ounces smoked salmon

Toast bread until golden brown. While the bread is in the toaster, mash the avocado with the lemon juice. Spread the avocado mixture on the toast and top with the smoked salmon.
