Didn't make it to the farmer's market this past weekend, so I'm lamenting the lack of seasonal tomatoes in my house. My husband's pop in North Carolina has a little farmer's market in his own back yard, aka his bitchin' garden. Two weekends ago my mother-in-law Jean brought up fresh corn, tomatoes and green beans on the train for us to indulge in. Boy was that some good eatin'! I think it is so cool when people can produce their own food. Like I've said before, it is only a matter of time before our efficient little "civilization" breaks down and we're all scrambling to coax something tasty out of the ground.Shannon and Brian, sister & brother-in-law sent some pics of Wilson's (father-in-law) backyard produce, so I thought I'd share. Will also post Brian's Garden Chili and Corn Bread recipes in case you're looking for something to make for dinner.

I wanted to say that I have enjoyed Tomato Appreciation Week. To celebrate the weekend, I have prepared Garden Chili and Roasted Cornbread. I know that this hearty dish may not go with cookouts and triple digit temperatures but how else can you enjoy the fruits of labor immediately? This cornbread was prepared with roasted corn (I love my grill for this) and the chili contains summer squash and tomatoes, all from my father-in-law's garden. My thanks to him is to invite him over for a home-cooked meal and great conversation. Cheers to our urban and suburban green thumbs for such a delight!!
GARDEN CHILI
1 can chili beans w/sauce
1 can tomato paste (for thickening)
1 packet of chili seasoning or use chili powder/onion powder/garlic powder to taste
4 med squash
4 med tomatoes
(you can add ground turkey or ground beef or an extra can of beans if you want the protein or to make it more hearty! make sure to brown the meat and drain before adding)
cube all the veggies
saute with seasoning over med hi heat, adding the tomatoes 5 min after the squash
add the beans (plus meat if you have so chosen) and lower heat to med low
add the tomato paste as it simmers and let it cook down
CORNBREAD
1 box of corn muffin mix
follow directions but add fresh corn that you have roasted on grill, zapped in the microwave or cut directly after shucking if you want it to be more crisp texture-wise
you can substitute a can of corn (well drained) if you don't have time to grill or microwave your fresh corn and cut it from the cob
*the recipe usually calls for 1 egg, 1/3 cup milk and 2 cups cheese
