Exciting, liberating, and freeing are not sentiments often associated with the gluten free lifestyle. Usually, people focus on how restrictive and limiting the diet is. That thought process can set you up for failure. First, if you think of it as a diet, you will be more tempted to cheat and fall off the bandwagon. Secondly, focusing on what you can't have will only make you want it more. Rather, think of everything this lifestyle has to offer.
As a gluten free eater, you are hyper aware of what enters your body. This awareness aids in your long term health. Ask some of your non-celiac friends to name all of the ingredients in the bread they eat. Many will be amazed to learn that "flour" or "bread" isn't the only ingredient. While label reading can be a nuisance, I like to think of it as an adventure.
This lifestyle gives you permission to be creative in the kitchen. You get to experiment with grains you may have never heard of before like quinoa, teff, and amaranth. You have the liberty to blend unique flavors that ordinarily would not be combined.
Gluten free doesn't have to be difficult, painful, and restrictive. Maintaining a positive outlook is critical to your emotional well being. Since so much of our culture revolves around food, make sure eating isn't something that stresses you out. Sure, it takes time and making adjustments, but what lifestyle change doesn't?
