What kind of foods come to mind when you hear the term 'Italian cuisine'? Spaghetti? Pizza? Many who are unfamiliar with Italian cooking think that about covers it. However, those familiar with the country know the cuisine is quite diverse, not only from one region to another but between towns as well.

Each town has unique ways of making sausage, cheese, wine and bread. A variety of pasta preferences can be found, with northerners preferring soft egg noodles while those in the south favor boiled spaghetti. Styles of cooking as well as popular dishes define regions throughout the country.

Italy's geography is one factor that contributes to its diverse cuisine. A peninsula, Italy is further separated from surrounding countries by a chain of mountains at its northern border. Mountains running through the narrow country create many environmental variations. Another explanation for Italy's diversity can be found in its history. It was not until 1861 that political unification occurred. For thousands of years prior to that, the many populations who occupied its territory cultivated their own traditions.

Italian cuisine includes a variety of flavorful dishes. Cantoro's Italian Market specializes in Italian foods.
