Butternut squash soup makes a great, easy Thanksgiving recipe.

The butternut squash, native to Mexico is a winter squash with a thick yellow skin and orange flesh. It has a sweet and nutty flavor and is similar to sweet potato or pumpkin.  This recipe for the best butternut squash soup will surely be a hit for your fall dinner.

Ingredients

  • 1 butternut squash, peeled
  • Nutmeg
  • 2 tablespoons unsalted butter
  • Salt and pepper
  • 1 onion, chopped
  • 6 cups chicken stock

Directions

  1. Cut squash into 1-inch chunks. In large pot melt butter.
  2. Add onion and cook until translucent, about 8 minutes.
  3. Add squash and stock.
  4. Bring to a simmer and cook until squash is tender.
  5. Remove squash chunks with slotted spoon and place in a blender and puree.
  6. Return blended squash to pot. Stir and season with nutmeg, salt, and pepper.
  7. Serve.
