Recipe and Shopping List - Week of July 21st

Foraged and Found's amazing morels
Greetings! This weekend is going to fly by and that is actually good since I cannot wait to share these recipes with you next week. We've got an appetizer for a special occasion, a salmon dish for any occasion, and another vegetable dish for warm summer days.

Two of my recipes this week come from the Washington Local and Seasonal Cookbook. If you haven't checked out this cookbook yet, I highly recommend it. Take a peak at my interview with one of the authors, Becky Selengut for some great insight into her views on cooking local.

Asiago Stuffed Morels

  • 1 Walla Walla sweet onion
  • 1 lb morel mushrooms (12 large, plus smaller for dicing)
  • White wine
  • Garlic
  • Parsley (optional)
  • Chives (optional)
  • 1/4 cup Asiago cheese
  • 2 cups Panko
  • 1 cup butter

 

Cedar Planked Salmon with Orange Pistachio Crust

  • 1 cup pistachios
  • 2/3 cup Panko
  • Fresh dill
  • Dijon or Chardonnay mustard (from Sea Breeze Farms or Zane and Zack's)
  • 1 orange
  • 1-2 pounds salmon
  • 2 cedar planks

 

Sauteed Snow Peas, Snap Peas, and Pea Shoots

  • 3 cups snow peas
  • 3 cups sugar snap peas
  • 3 cups pea shoots
  • Chicken stock
  • Oyster sauce

In addition to the recipes, I'll give you some information about some substitutions you can use for non-local ingredients. See you in the kitchen!
