How can you get more out of your trip than snapshots tired and bored faces, blurry landscapes, gas stations, and fast food joints?
1. Think outside of McDonalds: Resist temptation to fall back on what you know. Instead, talk to people in gas stations or hanging outside strip malls for suggestions on the best places to eat, drinking spots, and random places to check out.
2. Frequently ditch the car and stretch your legs by going on a walk. Preferably your walk takes you out of earshot of the highway!
3. Research: If your trip is not ENTIRELY spontaneous (i.e. you have a day or so to plan ahead) do a bit of research about the areas you will be passing through. You could make your trip all the more exciting by reading up on local history, music, novels set in that area, food/drink specialties to check out, and funky facts. Things to find: aliens, rocketships, desert flowers, mountains, petroglyphs
4. Take the scenic route: Try to take the longer, but much nicer roads (e.g. highway 1 or 101 instead of 5), that meander through mountains, parks, or along the coast.
5. The best thing to do on a long drive is to be flexible and go with your instinct. Spontaneity makes things fun and exciting, and caution (being careful on the road, etc.) will keep you alive long enough to enjoy yourself.
