Sandwiches are most often thought of as having a place only at lunch. This may be so for ordinary sandwiches, however, hearty, rich sandwiches belong only at the dinner table. With the right bread, tender meat, and the right toppings, you can build a sandwich that can stand on its own for dinner tonight.

One of the simplest ways to design a hearty sandwich is to look to existing recipes for other meals. You can easily transform a dinner salad by simply adding fresh bread like ciabatta or a french baguette. Turn this pork, apple, and spinach salad into an amazingly hearty sandwich. 

Pork tenderloin sandwich

Ingredients:

  • 1 large French baguette (cut into fourths)
  • 1 (one lb.) pork tenderloin, sliced into medallions
  • 1 Tbsp extra virgin olive oil
  • 3 Tbsp red wine vinegar
  • 1/2 tsp salt, divided
  • 1/2 tsp pepper, divided
  • 3 Tbsp water
  • 2 cups thinly sliced Gala or Red Delicious apples
  • 1/4 cup dried cranberries
  • 6 ozs. fresh spinach
  • 3 Tbsp crumbled goat cheese

Directions:

Heat a large skillet over medium-high heat. Coat with cooking spray and coat evenly with 1/4 tsp salt and 1/4 tsp pepper. Slice pork into 12 medallions. Add pork to pan and cook four minutes on each side, or until browned. In a separate bowl, combine remaining salt, pepper, water, olive oil, and vinegar. Stir with a whisk. In a large bowl, combine apples spinach, and cranberries. Toss well and divide onto four baguettes. Drizzle vinegar and oil mixture onto each sandwich and top with 3 medallions and 2 tsps of cheese.
