An Upstate chef is going to 'Hell'
CLIFTON PARK, NY -- The last time I ran into J. Maxwell (it's actually "Jay," but he likes using just the initial) was in October, when he was the general manager of the newly-opened Hollywood Brown Derby restaurant in Albany. We discussed the downtown spot's extensive wine list..jpg)
The next time I see him will be later this month when he'll be the lone Upstater among 16 hash-slingers and real chefs vying for the top prize on the new season of Gordon Ramsey's no-holds-barred "
Hell's Kitchen."
Maxwell, 32, who lives in this Saratoga County bedroom community, left the Brown Derby in November and already has taped his participation on “Hell’s Kitchen,” which makes its season debut on Wednesday, January 29. (Check your local listings for the location of your Fox Channel, which carries it.)
He won’t reveal how he made out, since all contestants sign a non-disclosure agreement, but we know it will be tumultuous if the spun version of J’s resume is any indication. It doesn’t mention his brief Brown Derby tenure, instead saying “J fries chicken in a food court and is furious about it.”
Actually, that seems to refer to the time he worked for Price Chopper supermarkets and sometimes cooked chicken. The show also says of his personality, “He believes that he is never wrong in the kitchen. For him being a chef is more than just cooking, it is everything. This anal retentive clean freak anticipates his passion and talent will pay dividends in ‘Hell's Kitchen’.”
I can hardly wait to see this go-round.

Red Hat Bistro. One in Seattle is called
Hattie's Hat and one in Medicine Hat, Alberta, Canada, is named
Hat's Restaurant. Then there is the
Cloche Hat Restaurant in England that is named after a popular 1920s ladies hat, and we can't forget the
Straw Hat pizza chain that boasts 55 sites, mostly in California. And on it goes.
