
Last year around this time I was giving birth to my third baby. I'm not sure the word "baby" ever applied to him, though. He came three weeks early and weighed almost 9 lbs.
Yes. I am DONE.
I've always worked hard to be a part of my oldest son's life: volunteering at his school, attending all meetings, hosting class parties, chaperoning field trips, teaching Art Masterpiece, baking special treats, etc. After our second child arrived, I had to cut back on some of those things, of course.
Once the third (giant) child arrived, my time was even more stretched. Last year was no exception. Both of my businesses were really starting to take off and I had less time to engage in the extra activities with my oldest son. I was feeling badly that my time was so squeezed but I wanted to do something fun for him at school for Thanksgiving. I had worked for the bakery at Safeway and Albertsons in a previous life (feels that way) so I know a thing or two about baking, decorating cakes, etc. I wondered if perhaps I could find a recipe that showed me how to make cupcakes in the shapes of turkeys.
Well, with the existence of Betty Crocker, of course there are turkey cupcakes. Duh.
Tired and run down, I stayed up for hours making enough cupcakes for my son's class and for his teachers. I dropped them off at the school the following morning.
Really - these are the cutest dang things you have ever seen. And...I became known by his classmates as the "mom who makes the coolest cupcakes in the world." (According to my son.)
Will I be making them again this year?
Of course. There's nothing better than having the full blown validation of your kid's classmates. Plus, I bet they've long forgotten my amazing cupcakes of 2008.
It's time to remind them.
