I just threw together this dip for the first time last week, inspired by some leftover already caramelized onions in the fridge.  It was so yummy I ate nearly half the batch right out of the blender, and it got a high approval rating from my non-veg husband too!  Try it as a standard chip or veggie dip, or spread thick on a piece of toast.  Another plus to this recipe - it's cheaper than making your own salsa (with now out of season tomatoes!) or guacamole. 

Low Fat Vegan Black Bean Dip

-2 cups black beans (drained and rinsed if using canned)

-1/2 cup veggie broth (or just water, but compensate with other spices to make up for flavor)

-1/2 large sweet onion

-1 t cumin

-1 t coriander

-1/2 t salt (more or less depending on saltiness of your broth/water)

-few shakes to 1/2 t cayenne depending on your spiciness preference

Directions:

1.  Caramelize the onion.  <--Instructions if you are a cooking novice.

2.  While onions are caramelizing, put rest of ingredients in blender. 

3.  Add finished onions to blender & puree until smooth.
