The Harvey Wallbanger cocktail is said to be named after a California Surfer named Harvey. He liked his screwdrivers spiked with Galliano Italian liqueur. Legend has it that one day Harvey had one too many cocktails and left the bar tripping over furniture and banging his head on a wall. From that time on he was known as "Wallbanger". This delightful drink is characterized by the blending of vanilla and orange, flavors that combine in the most delicious desserts. The recipe below adds cranberries and walnuts to give Harvey Wallbanger and autumnal twist.
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch bundt pan or 9x13 inch pan. Mix orange rind, craisins, and walnuts together. Set aside. In a large bowl, blend all purpose baking mix, sugar, 1st measure of Orange Vanilla Sugar, juice, vodka, Galliano, butter and eggs. Beat 3 minutes at medium speed. Stir in orange-craisin mixture. Pour into prepared pan. Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Combine confectioners sugar, 2nd measure of Orange Vanilla Sugar, orange juice, vodka and Galliano. Drizzle glaze over warm cake.
