A recent study from the Institute of Medical Science in South Korea provides new evidence explaining how the biological functions of asparagus can help alleviate an alcohol hangover and protect liver cells.
Asparagus is apparently good for reducing the headache, nausea, diarrhea and thirst of a hangover, and also seems to protect the liver cells from the damaging effect of alcohol toxins.
"Cellular toxicities were significantly alleviated in response to treatment with the extracts of asparagus leaves and shoots," said lead researcher B.Y. Kim in a news release from the Institute of Food Technologists.
Asparagus is rich in a variety of minerals and amino acids that include folic acid, potassium, fiber, vitamin B6, vitamins A and C and thiamin. These substances are found in higher concentrations in the leaves of the asparagus than in the shoots.
What was not clear in the study, just published by the Journal of Food Science, was whether one needed to ingest the asparagus before or after the party to benefit from this new veggie antidote.
