Cooking with kids: Sparkling fruit punch

Rebecca Jaros of Concord, Ohio sent in this delicious and refreshing punch recipe. It's ideal for hot summer days.  The ingredients are:

  • 1 bottle (64oz.) pomegranate-cherry juice 
  • 1 quart strawberries, cut into quarters
  • 1 pint each of blueberries and raspberries
  • 1 navel orange, thinly sliced
  • 1 small cucumber 
  • 2 liters sparkling water 
  • Ice cubes

In a large pitcher combine juice with berries and orange slices, chill for 1 hour.
To serve, peel cucumber and cut lengthwise in half. Remove seeds and cut into thin slices. Stir cucumber slices and sparkling water into juice mixture. Serve over ice and enjoy!
