Black Bean Soup
Serve up a delicious bowl of Black Bean Soup!

Black bean soup is the perfect meal for someone with little time and money. It is also delicious and great for a brisk autumn day. Though this soup only takes 20 minutes or so to prepare, it can be put into a slow cooker for those that only have 5 minutes to spare! Serve with a side of bread and salad and enjoy!

Black Bean Soup:

2 (15 oz.) cans black beans, drained and rinsed

1 1/2 cups chicken stock

1/4 cup chopped onion

1 tsp. cumin

1 cup salsa

4 tbs. sour cream

1 tsp. oil

 

Directions:

1. Heat oil in pot over medium heat.

2. Cook onion until soft.

3.. Add stock, beans, salsa, and cumin to pot. Simmer 10 minutes.

4. Using a wooden spoon, smash beans in pot to thicken soup.

5. Ladle soup into bowls and top with a dollop of sour cream.
