Weight gain Wednesday: Eggs for the whole family

In come eggs. Eggs are wonderfully versatile for children with special dietary needs (except for those with egg allergies of course) and their families who would rather not gain extra weight. Many variants can be made nearly as easily as making only one version, unlike many other meals with high-fat variants.

To make a regular version, low-fat version and high-fat version of eggs, modify this recipe and make everyone in your family happy.

You will need:

6 eggs
Skim or low-fat milk
Heavy whipping cream or half and half
Whole milk.
Cheese (Velveeta works well for our family)
Sausage if desired
(I often cook up sausage for pizza on Friday nights and use the leftovers a day or two later for eggs. I keep about a cup or so.)
Onion
Garlic (3 cloves)
4oz Mushrooms (diced)
3 bowls
Olive oil

(This recipe also works well with diced tomatoes and bell peppers. Use what you have in terms of veggies and omit what you don't have or don't like.)

Take two eggs and separate the yolks in one bowl (bowl 1) from the whites (bowl 3). Add two eggs to the yolks (bowl 1) and two eggs (bowl 2) to the empty bowl.

BOWL 1:
Add 1/4 cup of a mixture of heavy whipping cream or half and half and whole milk

BOWL 2:
Add 1/4 cup low-fat or skim milk

BOWL 3:
Add 1/4 cup skim or low-fat milk

BOWL 1:
Chop up half of an onion and peel garlic cloves to mince for skillet. Chop up about 2/3 cup of Velveeta. Heat 2-3 tablespoons of olive oil in a skillet over med heat.

After oil warm, mince garlic clove and add onions, mushrooms and 1/2 cup sausage). Heat for about 1-1 1/2 minutes and add Bowl 1. Quickly add 1/2 of the cubed Velveeta. Cook until eggs fully cooked and serve.

BOWL 2:
Put eggs on platter and start again with 2 tablespoons of oil (not 3), 1/3 cup of sausage instead of ½ cup and 1/3 cup of Velveeta.

BOWL 3:
Put eggs on platter and start again with 1 tablespoons of oil (not 2), the remaining sausage instead of 1/3 cup and the remaining Velveeta.

If you prep it all before cooking, all three will be complete in 15 minutes.
