The Baja Sol Restaurant Group announced the signing today of a Franchisee who will develop a territory that covers Anoka and Northern Ramsey Counties. The Franchisee is planning to open four Baja Sol Tortilla Grill locations, with the first location to be in Blaine, MN.  Baja Sol Tortilla Grill specializes in creating fresh flavor profiles through the use of fresh ingredients, Latin- and Caribbean-influenced contemporary recipes and their ever-popular bottomless chips and salsa bar. This counter-service, fast casual restaurant, known for its high food quality and exceptional value, also offers menu items for the vegetarian and gluten-free set.

The Blaine location is the sixth of 25 Baja Sol Tortilla Grills that are scheduled to open nationally in 2009 for the aggressively growing Minnesota-based chain. “Even though other restaurant concepts have been struggling in this economy, Baja Sol is built from a solid foundation focusing on providing family-friendly, fast and delicious food. These factors have allowed for this steady growth in an unsure economy,” Baja Sol president Bridget Sutton said.

Sutton cited the increasing availability of good real estate and reasonable leasing and construction costs as key reasons for her company’s expansion. However, she also cited the continued growth of Latin food and culture as contributing factors of increasing demand. According to Sutton, “No other single cuisine is growing as fast or has stronger long-term growth potential as Mexican and Latin cuisine. In 1990, Mexican food accounted for just $3.75 billion in U.S. restaurant sales. In 2008, Mexican food sales were forecasted to exceed $16 billion with no signs of slowing in sight.”
