Parasole to open a gourmet burger joint in Minneapolis
Phil Roberts, CEO of Parasole Restaurant Holdings, Inc. announced that the newest concept in their stable of restaurants will be called, Burger Jones, and will open in the spring of 2009 near Lake Calhoun. The menu will feature burgers ranging from the classic hamburger to more exotic takes, such as a lobster burger and could even boast a foies gras topped burger. Prices for the burgers will range from $8.95 to $20.00. Roberts says that; “it’s not going to be fancy, but it will have some style.” There has been a recent trend in upscale burger “boutiques” opening lately on both coasts and in Las Vegas, and now it’s Minneapolis’ turn.
Many details of the menu are still to be nailed down, such as the blends of beef to be used. Some of the early talk is about Kobe or Wagyu beef mixed with chuck and hangar steak. The more non-traditional offerings could include: veggie, turkey, buffalo, lobster, salmon, and tuna burgers. Robert’s even hinted at a gourmet take on the “Juicy-Lucy”, a local Minnesota favorite that compresses two patties around a molten-cheese filling.
Burger Jones also will offer other burger joint classics like chili, french-fries and hot dogs. There will be shakes and malts, including some “adult” versions blended with alcohol. The eatery will have a full liquor license, featuring well-stocked beer and wine lists and even a signature line of martinis.
Burger Jones comes on the heels of a successful launch of Parasole’s second Salut Bar Americain location in Saint Paul. Parasole also operates other local concepts and national chains - Manny’s Steakhouse, Chino Latino, Figlio, Muffuletta Cafe, Good Earth, Salut Bar Americain, Pittsburgh Blue, The Living Room and Prohibition.
