Red Quinoa

The other day in the grocery bulk section i was browsing the grains and came across red quinoa.  I have just recently become a quinoa lover- while at a yoga teacher training one of my fellow yogis brought a delicious dish of quinoa and veggies to the graduation potluck. I fell in love with this lovely and strange looking grain. Regular quinoa is white almost a brownish color like pasta or brown rice. It becomes translucent when its cooked.  Red quinoa is a beautiful maroon and white color and when cooked the color deepens to a brown.  

 

The trick to cooking this whole grain is to wash it thoroughly before cooking. I like to measure out the proper amount into a fine mesh strainer and run it under the tap while rubbing the little grains against the mesh.  The water will foam a little-this is just the saponins washing off. The saponins can make your dinner bitter so the washing is very important.  Other than that, it’s just like cooking rice. 2 to 1 ratio water to grain- simmer covered 15-20 minutes. just like rice you can do anything with this nutty, chewy grain. I rough chopped a couple of purple radishes, a cucumber, a red bell pepper, tomatoes and avocado- added salt and pepper and viola! It was an amazing meal.  

 

Quinoa is a yogic food because it is a whole grain, is gluten-free, and high in fiber and protein! You can have it for breakfast by adding raisins or some nice fruits , cinnamon, honey and maybe come chopped nuts. Add veggies and have it for dinner… have it cold or warm plain or fancy this ancient grain will leave you satisfied, happy and healthy.
