Okay, so you’re now staring at your slightly moldy Jack-O-Lanterns, quizzically thinking about how you could have made better use of its parts, rather than having spent $6 for something that you just hacked up and will now dump in the garbage. Am I right? Well, probably not, but you should still be thinking of ways to use up entirely the things that you buy!

Additionally the rumor is going around that there’s going to be a shortage of solid-pack pumpkin and pumpkin pie mixes this year, so what better way to get your pumpkin fix than to buy whole, post-Halloween discounted pumpkins, bake and peel them, and puree them to freeze for later?

But the question remains…what to do with the seeds?? Don’t let those little gems go to waste; they’re power-packed with nutrients and healthy fats, just waiting for you to make use of them! With a little washing and a long, slow roast, they can become absolutely decadent as a salad topper, or as a tasty snack on their own.
