When I think of the word "chia" I think of a terra cotta Jerry Garcia head or a terra cotta cat being smeared with a paste that kind of looks like snot. I think of Christmas presents that never quite make it out of the box. Finally, I think of $9.95 and dusty un-opened boxes at garage sales years and years later.
Up until recently I never would have thought of Chia as some sort of nutritional crop. Trade publications are suddenly billing it as the new superfood-and with good reason too! Chia is a traditional food of the Aztec and Mayans. The following are some of the attributes the teeny seed has to its credit:
-About three times richer in omega-3s than flaxseed AND they do not have to be ground to access these essential fatty acids
-Their high antioxidant content allows them to be stored for long periods of time.
-One tablespoon of chia powder provides 3 grams of protein and 24% of the daily value on fiber.
-One ounce of the seeds contains 177 mg of calcium, 265 mg of phosphorous, 0.6 mg of manganese, and much more!
Chia seeds are soon going to be seen as additions to functional foods from granola bars to bread and cereals. It has been suggested to just add chia to your flax seeds. So however you would happen to use flax....do the same with your chia.
So be looking for this tiny nutty-flavored gem to be taking the shelves at your local health food stores!
