Nut-Free Graham Cracker Crack

My daughter helping in the kitchen

One of my favorite times of year is Thanksgiving. Not only does it give me a chance to really get into the kitchen and get the kids get involved, it reminds me of what family is all about.

In my family, we have to work around serious nut and egg allergies (not to mention fish and shellfish) and that makes it more important that I find recipes that not only work, but taste great. 

This one is one of my favorites not only because it's sweet and yummy, but the kids have fun helping and it's hard to stop the giggling once it's started.

All you need is a little patience to not eat too much as you go and you're sure to have a yummy, safe treat to bring to someone's house or to have at your own house.

Ingredients:

12-14 graham crackers (enough to fit on baking sheet)

1 1/2 sticks butter, cut into pieces, at room temp.

1/2 cup light brown sugar, packed

1/4 tsp. salt.

1 1/2 cups Enjoy Life (or any other nut-free brand) chocolate chips

1 cup crushed pretzels

Recipe:

Preheat oven to 375. Line a baking sheet with foil, leaving some extra at the ends, so when you need to take the foil off, the crackers won't all fall.

Line the bottom of the pan with the graham crackers

Melt butter over low heat, then add the brown sugar and salt, whisking until mixture is smooth, caramelly (about one minute) Pour the sauce over the graham crackers, coating evenly. Bake in the oven about 10 minutes or until they're golden brown.

This is where I like to get the kids involved.

Carefully remove the pan from the oven and scatter the chocolate chips over the crackers. Then gently spread the melting chocolate over the crackers with a spatula, back of spoon or other utensil that will be yummy to lick when done. Sprinkle the crushed pretzels evenly over the chocolate coated crackers. Then freeze the crackers in the pan until it firms up, about 20-30 minutes. 

Now, here's the fun part. 

You can either break the crackers in the pan or lift the crackers from the pan by pulling up on both ends of the foil. Then over a platter or cutting board, break the crackers into serving pieces. See how many you can put into a container before you and the kids can eat them up!!!!
