I have long been a fan of the veggie burger. I've made my own several times, and also enjoy the store-bought variety. I always walk past the vegetarian coolers in the grocery store and pick up a delicious looking box. I then rush home and make my first veggie burger that night. But after that, they seem to sit in my freezer for weeks until I remember them again.

Grilled veggie burgers are hard to resist, but when the snow starts to fall, subzero temperatures ensue and grilling becomes a precarious endeavor, baked veggie burgers just don't always appetize me the same way. To combat this, I've found some interesting toppings to spice the burgers up, and thought I would share them.

Mexican veggie burgers: topped with hot sauce, guacamole and jalapeño peppers.

Another take on the Mexican veggie burger: topped with salsa, jalapeño and guacamole (or just sliced avocado.)

Even more veggies: roasted red peppers, sprouts, onions, lettuce, tomato and dill mayo or sauce

Other delicious toppings: blue cheese, muenster, mushrooms, 1000 island
