Pies of the Kentucky Derby recipe: Easy, Traditional and a Triple Crown

KentuckyDerby pie is quite easily one of the richest, most decadent desserts you can make. Served traditionally during Kentucky Derby days, derby pie is a treat any time of the year, and makes a great dessert for holiday parties and potluck dinners. In this article, we will discuss how to make derby pie.

 
Easy 1-2-3  KentuckyDerby Pie
 
1 (3 1/2 oz.) pkg. Vanilla Jello pudding & pie filling (not instant)
1 c. light corn syrup
3/4 c. canned evaporated milk (not condensed)
1 egg, slightly beaten
2 T bourbon
1/2 c. chocolate chips
1 c. pecans
 
1 unbaked pie shell
 
1. Blend pudding and corn syrup in bowl.
 
2. Gradually add milk, bourbon and egg.
 
3. Add pecans and chips.
 
4. Pour into unbaked pie shell. Bake at 375 degrees until top is firm and begins to crack. About 40 minutes. Cool at least 3 hours.
 
Triple Crown Pie
 
4 Tbs butter, softened
3 oz. cream cheese, softened
1 c. flour
2 eggs
1/4 lb. butter, melted
1/3 c. flour
1 c. semi-sweet chocolate chips
1 c. nuts, chopped
1 c. sugar
1 TB. bourbon or 1 tsp vanilla
1/8 tsp. salt

1. Cream 4 TBS Butter and cheese. Add 1 cup flour. Roll in wax paper and chill 1 hour. Roll dough out and fit into 9 inch pie pan.
 
2. Beat eggs until frothy. Add melted butter and 1/3 cup flour with other ingredients. Process until chocolate is very coarselychopped. (Do not over-process).
 
3. Pour into pie shell and bake at 325 degrees for 45-60 minutes, or until the center rises and the pastry is tan.
 
4. Serve topped with whipped cream.


Traditional Pie of the Derby
 
1 Frozen Pie Shell

Filling
1/2 cup butter unsalted melted
2 eggs
1 cup sugar
1/2 cup flour
1 cup semi-sweet chocolate chips
1-1/2 cups pecans, chopped
2 T.B. bourbon

1. Beat eggs with cooled butter. Add flour and sugar. Beat until mixed well.

2. Gently fold in pecans, chocolate and bourbon. Pour into unbaked pie shell.
 
3. Bake at 350 degrees for approx. 30 min. Serve with whipped cream.
