Macadamia crusted chicken recipe

Finding new and improved chicken recipes can be a daunting task. Who wants the same old tired chicken every week?

There is so much you can do with chicken, the possibilities are endless!

I don’t know about you but I really enjoy a good fried chicken, but in recent years I’ve given it up. But I can’t say I have been deprived in any way because I found ways to recreate my favorite foods in a lighter way which does not interfere with the flavor.

Fried chicken can be heavy, but I will tell you this chicken will have you wanting more. It’s crispy, it’s flavorful and it’s absolutely perfect for summer.

Instead of the traditional flour coating, I mixed it with roasted almonds and toasted macadamia nuts. Get out the tiki torches, because it’s party time!

Tip:  I serve this with a mixed green salad with goat cheese dressing and blueberries and almonds. The goat cheese dressing is divine over the top of the chicken!  Stay tuned, the recipe is coming up!
 

Macadamia Almond Crusted Chicken

Ingredients:

  • 2 Chicken breasts, pounded lightly with a mallot
  • ½ cup roasted almonds
  • ½ cup toasted macadamia nuts (follow the link for information on how to toast the nuts)
  • 1 egg
  • ½ cup flour
  • Kosher Salt/freshly ground black pepper
  • Olive Oil

Directions:
In a small food processor, add nuts and flour to lightly chop and pull the mixture together. Pour into a shallow dish.  Add salt and pepper for seasoning. Crack egg into another shallow dish and beat lightly. Coat each chicken breast in the egg, shake off the excess. Then, dredge each chicken breast in the nut/flour mixture.

In a heavy bottomed skillet, heat over medium high heat, then add olive oil. Once pan is hot, add the chicken breasts. The pan should make a sizzling noise, if it doesn’t, it’s NOT hot enough! The heat on the pan will create a nice crust. Cook on each side for about 3-4 minutes depending on the size of your chicken breast. The chicken is done when the juices run clear. Serve alongside mixed greens salad with goat cheese dressing and blueberries!
