If you enjoyed the Macadamia Crusted Chicken I shared with you last week, you are going to love it’s partner in crime --- a mixed green salad with fresh blueberries, roasted almonds and a tangy goat cheese vinaigrette.

The tang in the dressing from the goat cheese and buttermilk liven up the mixed greens. By adding a bit of crunch from the almonds and sweetness of the blueberries you have one well rounded salad.

The dressing is also wonderful drizzled over the chicken its served with ….so feel free to add more, I won’t tell.
 

Mix Green Salad with Blueberries and Almonds
1 bag mix greens
¼ cup roasted almond slices
½ cup blueberries
 

Goat Cheese Yogurt Dressing
¼ cup soft goat cheese (I used Chavrie)
¼ cup buttermilk
2 T 0% Fage Greek Yogurt
1 tablespoon fresh chives
Kosher salt/freshly ground black pepper to taste
