Still have those ham leftovers from Easter lurking around?

No one likes to eat the same tired leftovers day after day, but if you re-create them in a meal, it can make them so much more appetizing.

Make use of your leftovers by giving them a facelift!


Ham and Spinach Quiche
Recipe by: Courtney Monigold

5 eggs
2 cups lowfat cheese
1 ½ cups cheese, shredded (your choice any is fine)
1 cup chopped fresh spinach
1 cup chopped ham
1 pinch kosher salt
½ teaspoon freshly black pepper
1 store bought pie crust

Directions:
Preheat oven to 400 degrees.

Line pie pan with pie crust. Set aside. Line with layer of cheese, then ham and chopped spinach.

In a mixing bowl beat eggs, add milk, and beat again until combined. Salt and pepper to taste. Pour into pie pan.

Bake in the oven for 45 minutes- 1 hour until golden brown on top.
