It’s Wednesday, are you ready for dessert?

Some days are just way to hectic to spend the entire day whipping up a dessert. This tart is perfect for those busy days but it’s elegant enough to serve at a dinner party.

Feel free to try this with different fruit. The pastry dough can be found in your grocer’s freezer section usually around the frozen pastries and fruit. Just be sure to thaw it in the refrigerator before you use it.

Blackberry Pear Goat Cheese Tart
Recipe derived from: Emeril Legasse

Ingredients:
1 sheet puff pastry, thawed
2 ounces goat cheese, softened
2 ounces mascarpone cheese, softened
2 tablespoons honey (any flavor)
1 green pear, cored and thinly sliced
1 cup blackberries
4 tablespoons “sugar in the raw” (Turbinado Sugar)
Confectioners’ sugar, whipped cream – Optional

Directions:
Preheat oven to 400 degrees.

Roll out the pastry dough on a lightly floured surface. Fold the edges on the 4 corners to form a 1 inch wall on each side. Put on a baking sheet lined with a Silpat or parchment paper.

In a small mixing bowl, mix together goat cheese, mascarpone cheese, and honey. Spread the cheese into the pastry shell. Neatly arrange the fruit and sprinkle the turbinado sugar on top.

Bake for 25-30 minutes. Transfer to a cooling rack. Sprinkle with confectioners’ sugar and whipped cream if desired.
