Welcome to 'Fabulous Friday'!  Here is a great weekend breakfast option!

I absolutely love French toast, the thicker the bread, the better. I make it all kinds of ways when I have left over bread, so when I found myself with a left over box of panetonne from Christmas, what else would I do with it, except make French toast?

Panettone is traditional Italian Christmas ‘cake’ bread that is similar to sweet raisin bread. It’s perfect for French toast because you can cut it in any thickness you like. You can find these at any specially bakeries, specialty markets! I have found them at Target, Trader Joe and at Papa Joe’s Market in Birmingham.

Panettone French Toast
Serves: 2

Ingredients:
4 slices left over panettone bread, sliced thick
4 eggs
½ cup milk
1 tablespoon cinnamon
Fresh fruit for the top– Blackberries, raspberries, blueberries, strawberries
Pure Maple Syrup, warmed
Confectioners’ sugar for dusting

Directions:
Preheat griddle pan.

Crack 4 eggs in a bowl and beat lightly until broken up, add milk, beat well. Add cinnamon mix in. (You can use more cinnamon if you like it…I am always heavy handed with the cinnamon plus it’s an anti-oxidant and good for you).

Add oil or butter to the skillet.

Dip the bread into the egg mixture until fully coated on each side, then place on the griddle. Cook on both sides, until golden brown. (Takes about 2 minutes a side, but keep an eye on it).
