Peanut butter no-bake 'cookie'

Welcome back to my holiday "stress-less" cooking series!  Are you ready for dessert??
Don’t think you have time to participate in a cookie exchange? Don’t be a cookie Scrooge; check out this quick and easy recipe! 
It does not get any easier than my take on a nutty peanut buddy. I got this recipe from a co-worker years ago and I have been making them ever since. Not only are these ‘no bake cookies’ easy, but they are interchangeable to fit your taste. (i.e. you can use chocolate chips or white chocolate chips, butterscotch chips or peanut butter chips)
I get requests from my personal trainer (yes, I am calling him out publicly. He knows who he is) to make these for him each Christmas. These ‘cookies’ are so embarrassingly easy that they may just become a staple in your baking for the holidays. 
 
Peanut Nutty Buddy
Ingredients:
12 oz. bag of peanut butter chips (or you can use butterscotch)
6 oz. of white chocolate chips (or you can use milk or semi-sweet chips)
1 ½ cups peanuts (your choice of regular, or honey roasted)
3 cups Crispix cereal
1 teaspoon vanilla (my addition to the recipe because you can never have too much vanilla!)
 
Directions:
1.        In a heavy bottom sauce pan on LOW, heat the peanut butter chips and white chocolate chips stirring frequently with a wooden spoon or spatula. (You have to be VERY careful heating these as they will burn very easily. You may use a double boiler as well but I never do and it works fine as long as you watch the heat.)
2.       Once the chips are just about melted turn off the heat and continue stirring until dissolved. Add the vanilla.
3.       Add the nuts and stir to combine.
4.       Then add the Crispix cereal and gently fold in.
5.       Spoon onto wax paper with a tablespoon into small clusters.
6.       Let cool to room temperature and store in an airtight container.
