Gluten-free French Toast

French toast is a wonderful breakfast to have on a chilly fall morning.  Here is a simple recipe for Gluten-free French Toast.

2 eggs, lightly beaten
Dash of 1% low-fat milk (or Almond Breeze)
Dash of cinnamon or nutmeg
2 pieces GF bread (Pamela’s Gluten-Free was used in this recipe)
Powdered Sugar
Syrup (Aunt Jemima is gluten-free, as is 100% maple syrup)

1. Dip bread into egg mixture.
2. Place bread in heated frying pan or griddle over medium heat.
3. Cook 3-5 minutes per side (check to make sure it isn't burning….it should get nice & brown)
4. Remove from pan and top with powdered sugar & syrup.

Other options: After dipping bread in the eggs, dip in flaxseed meal for a nutrition boost.  Egg whites may be substituted for whole eggs.
