Pizza from scratch

 There isn’t a night that goes by that the notion of picking up pizza for dinner doesn’t run through most of American’s minds around 5:00 or so. But the thought of a homemade pizza, well that’s a fabulous idea that isn’t going to take that much effort with what is probably already in the refrigerator.  The wonderful smells of a hot pizza will permeate the kitchen and the senses of all of those around. Rich, caramelized onions and garlic, spicy tomato sauce and sweet sausage are some of the components of this tasty pizza that you can make tonight. You can use whatever you have in the fridge with a little imagination to create your own signature pizza. Use leftover grilled chicken or steak, olives of any kind, peppers and a variety of cheeses can all make wonderful combinations for perfect pizza. When paired with a simple salad and a glass of wine you have the perfect makings for dinner in a snap. Homemade pizza dough is easy with the combination of yeast, honey, flour and olive oil but you can always opt for the already prepared dough and still have an impressive pizza.  Some great combinations can include Italian sausage, sliced banana peppers, caramelized onions and garlic, and cheese; Sautéed mushrooms, artichoke hearts, prosciutto and cheese; Grilled chicken, red onions, crumbled bacon and Swiss cheese; or grilled steak, grilled peppers and cherry tomatoes. Skip the Hut or the Inn and make your own. Enjoy!
Best Pizza Dough
1 cup lukewarm water (about 100 degrees)
¼ cup olive oil
1 tsp honey
1 envelope active dry yeast
3 cups plain flour mixed with ¼ teaspoon kosher salt
Mix the honey and oil into the warm water and sprinkle the yeast on top. Let sit until a “sponge” is formed, about 5 minutes. In a mixer with dough hook attached, mix the flour and salt with the yeast mixture. Mix until a smooth ball is formed adding more flour if needed. Place dough ball into a bowl that has been coated with oil and turn dough over. Cover with plastic and let rise for 1 hour. Preheat oven to 425 degrees. Roll or press dough into a 9 X 13  pan and top with tomato or pizza sauce and your favorite ingredients. Bake for 15 minutes or until cheese is bubbly. Serve immediately. Yield: 12 servings
