Candied orange peel recipe

Candied orange peel is a tasty treat by itself, but it also lends a delightful flavor to baked goods and gorgeous color as a garnish. Making candied orange peel is not a difficult process, but it is time consuming. The results, if you are patient, are worth the time.

CANDIED ORANGE PEEL

Ingredients

  • 3 oranges
  • 1 tablespoon salt
  • 4 cups water
  • 2 cups sugar
  • 1/2 cup  water
  • sugar

Directions

Cut the peel from each orange into sixths, by running a knife from top to bottom as if forming petals. Carefully loosen and remove skins. Place the peels in a bowl with 4 cups water and salt. Weight peels down with a plate and let stand overnight. The following day, drain and wash thoroughly. Add peel and cold water to a saucepan and bring to a boil. Drain, rinse and repeat 2 more times-this will take away the bitter flavor. Cut peel into long strips and place it, 2 cups sugar and 1/2 cup water in a saucepan. Cook slowly until peel is translucent, stirring occasionally. Remove from heat and drain. Place on a wire rack and let excess glaze drip off, then roll in remaining sugar.

Cook's Notes-this recipe works well with the peel lemon and grapefruit, too
