In honor of National Peanut Butter Lover's Month-an easy to make and delicious peanut butter candy. It tastes very similar to a Butterfinger, but without the crunch.

PEANUT BUTTER CANDY SQUARES

Ingredients

  • 2 cups white sugar
  • 2 tablespoons light corn syrup
  • 3/4 cup milk
  • 1 pinch salt
  • 1 teaspoon vanilla extract
  • 1/3 cup peanut butter
  • 8 ounces chocolate coating

Directions

Pour chocolate coating in a microwave safe bowl and microwave in 30 second intervals until nearly melted. Stir well after each 30 seconds. Once smooth and creamy,  pour into a buttered 8X8 pan. Set aside. In a large saucepan, combine sugar, corn syrup, milk and salt. Cook to 234 degrees F. Remove from heat, stir in vanilla and peanut butter. Beat until mixture thickens slightly, then pour on top of chocolate. Chill until set, cut into squares and serve.

Makes 16 pieces
