Summer salad with raw vegetables

 

Buttercrunch lettuce is so light and fresh this time of the year.  Try adding these raw vegetables to it:

 

chopped organic tomatoes

chopped organic green onions

chopped organic asparagus

broccoli florettes

canned organic garbanzo beans

chopped organic carrots

chopped organic zucchini

organic micro broccoli sprouts

 

Mix all the ingredients together and add organic parmesan cheese.

 

Drench with a dressing made with equal parts of lime juice and organic extra virgin olive oil.  Add a dollop of Dijon mustard and a few dashes or organic tamari sauce.  Mix together.

 

A light cracker with fiber is excellent with this salad.  This meal will fill your tummy.  It has a full day’s worth of vegetables and fiber.
