
It's really great to enjoy cold spaghetti noodles or flat noodles in the summer when it's too hot to cook, like now, in Austin. Of course you must cook the noodles first, but after you allow them to cool try this recipe using some of the organic tomatoes you can find at any of the organic farms, such as Boggy Creek, or the various farmers' markets around town.
Mince the tomatoes and toss them into the cold noodles along with finely chopped fresh organic basil, a teaspoon of tumeric (excellent to reduce joint and muscle inflammation, fighting infections and good for digestion), a dash or two of oregano, a squeeze of lime juice and organic extra virgin olive oil. Cover and refrigerate the noodles until ready to serve with an organic 12 grain toasted bread and a dollop of organic extra virgin olive oil.
Serve a small salad using organic butter lettuce and even more of those yummy, organic tomatoes chopped and sprinkled with more olive oil (it's so good for you) and organic apple cider vinegar and a dash of organic tamari.
You can never have too many tomatoes this time of the year.
