Brace yourselves! There's a new pizza topping in town. It's called BBQ Chicken, and it's oh so simple-- yet tangily delicious.
It's also great for those evenings when you are out of marinara sauce, but still long for the sweet embrace of homemade pizza. Because you may not have marinara sauce in your fridge, but chances are you have at least one bottle of tangy BBQ sauce lying around. If you don't, I'm sorry.
When I say BBQ sauce, I'm unfortunately not referring to the delicious vinegar-based Eastern Carolina style BBQ sauce. This is not to say that I don't love that style of BBQ sauce style and addict my friends to it when they come visit (you know who you are). But this kind of pizza calls for a thick, sweet and/or smoky sauce.
Ingredients:
1 homemade pizza crust
1/2 cup BBQ sauce
1 cooked chicken breast, chopped or torn into bite-sized pieces
3/4 cup shredded mozzarella cheese
3/4 cup shredded provalone cheese
1/2 an onion, chopped into rings
1 clove of garlic, minced (optional)
Directions:
Slather that homemade pizza crust with BBQ sauce. Don't be shy.
Sprinkle with a layer of (mixed) cheese
Now a layer of chicken
And a layer of onion ring slices (and garlic if using)
Top with remaining cheese
Bake at 450 for approx 15-20 minutes. Oh man. I really wish I had one in front of me right now.
