There just never seems to be enough time in the day to spend time with my family, let alone make a healthy, yet delicious dinner. I recently found a wonderful website, Easy Kids Recipes, with some delicious ideas for dinner. One of my favorites was the Buffalo Chicken Pizza.
To make this recipe, you will need the following ingredients:
1 Pillsbury Pizza Dough
2 skinless/boneless chicken breast
2 cups of mozzarella cheese (although we added a little bit more!)
BBQ sauce (or a variety of hot sauce-we used a mixture of both)
2 Tbs of extra virgin olive oil
Ranch Dressing (although it calls for Bleu Cheese)
In the morning, throw chopped up chicken in a bowl with some BBQ marinade. When you are ready to cook dinner, pull the chicken out and cook until done. While the chicken is cooking, follow the packaging instructions on how to bake the pizza dough. (Approximately 8 minutes at 400 degrees) After the chicken and pizza crust are done cooking, sprinkle the crust with the cheese and chicken. Drizzle additional sauce to desired amount. Put the pizza back into the oven for about four minutes or until the cheese has melted and the crust is brown. Serve with a side of ranch.
*My family also found that we liked to add tomatoes to the pizza as well! All I did was cut up a tomato in little bits and sprinkled on top of the pizza. It adds a serving of vegetables and is extra yummy!
