Try this healthy Thanksgiving sweet potato recipe

Sweet potatoes are loaded with vitamins and are an
essential part of any Thanksgiving feast.

Sweet potatoes are a staple for many Thanksgiving meals. However, if you’re trying to lose weight, smothering this otherwise healthy vegetable in butter, sugar and marshmallows is not a good idea.

Below is a recipe from Muscle and Fitness Hers that enables you to have your sweet potatoes without compromising its nutritional value. In fact, sweet potatoes - are packed full of beta carotene, B6 and other vitamins which promote relaxation.

Roasted Sweet Potatoes with Gremolata
Serves 8

Ingredients:
 

  • 4 medium sweet potatoes or yams (peeled and cut into ½ inch wedges)
  • 3 tbsp olive oil
  • 2 tsp smoked paprika
  • Salt and pepper to taste
  •  ¼ cup chopped Italian parsley
  • 1 tbsp finely grated lemon zest
  • 4 garlic cloves (minced)
  1. Preheat oven to 425 degrees.
  2. In a large bowl, toss potato wedges in olive oil and paprika. Season with salt and pepper. Transfer to a baking sheet and roast 30-35 minutes, turning potatoes once halfway through.
  3. Return potatoes to mixing bowl and toss with parsley, lemon zest and garlic. Serve immediately.
     

Nutrition Facts (per serving): 188 calories, 3g protein, 35g carbs, 5g fat, 0g fiber, 0mg cholesterol, 160.5 mg sodium, 2 g sugar.
