For Halloween each year we had the same meals growing up. Chili and homemade doughnuts. Yum Yum.
As a mother it is important to me that my child have a good healthy meal before going out and gorging on candy and more candy.
Here is one of my favorite recipes to have on Halloween:
White bean chicken chili (compliments of my sister-in-law)
1 lb cooked chicken breast cubed
1 med onion
1 1/2 tsp garlic powder
1 T vegetable oil
2 cans of great northern beans
1 tsp salt
1 tsp cumin
1/2 tsp pepper
1/4 tsp cayenne pepper
1 cup sour cream
1/2 cup whipping cream
Mix all the ingredients together except the sour cream and whipping cream. Cook for 40 minutes. Before serving add the whipping cream, top with sour cream and cheese garnish with tortilla chips. Enjoy!
